Soft Bavaroise with Jelyap Leaf

Bavaroise, France’s soft and tender dessert, is even smoother and more delicious with Jelyap Leaf Gelatine!
Ingredients:
2 sheets of Jelyap Leaf Gelatine
2 eggs
4 tablespoons of granulated sugar
250 ml of milk
1 tablespoon of instant coffee
125 ml raw cream
Preparation:
Soak the gelatine in a bowl of cold water to soften. Prepare instant coffee by dissolving it in a quarter cup of hot water. Then separate the whites and yolks of the eggs. Whisk the egg yolks and granulated sugar with the help of a mixer to the creamy consistency. Then pour the milk into a saucepan and start cooking it over medium heat. Add coffee and stir. Bring to a boil and remove from the heat.
Gradually add the milk with coffee to this blend while mixing the sugar and egg until it has a creamy consistency. Then pour the mixture back into the saucepan with the boiled milk and start cooking on low heat. Stir in the same direction continuously with a wooden spoon until it thickens. Be careful not to boil over. Once the mix reaches a consistency that will slowly flow from the spoon, remove it from the heat.
Squeeze the softened gelatines completely to remove water and add them to the saucepan. By stirring, melt them in the hot mixture. After the gelatines melt and are incorporated in the blend completely, filter the mix through a fine strainer and move it to another bowl. Cool the mixture by stirring from time to time to prevent skin from forming on top.
Beat the separated egg whites with a mixer to form a foamy texture. In a separate bowl, beat the cream in the same way for 3 minutes. Stir in the cooling bavaroise blend, first adding the cream you have whipped. Then add the egg white with the consistency of foam, stirring gently without spoiling the foam form.
Grease the molds before pouring the mixture. Divide the ready Bavaroise blend into the molds and freeze them in the refrigerator for 2-3 hours. Before serving, turn the frozen Bavaroise upside down into serving plates. You can serve it garnished with coffee beans and sauces of your choice.
